Pumpkin Pie Cake
This recipe comes from a little cookbook called the "Fannystelle Potluck Cookbook Shared Secrets". Fannystelle is a little farming community in Manitoba, Canada. My wife makes this cake for our pumpkin lift every year and its always a big hit.

In a large bowl combine:

1 large (796 mL/28 oz) can pumpkin

1 large (385 mL/14 oz) can evaporated milk

3 eggs

3 tsp cinnamon

1 cup brown sugar

1 tsp salt

Pour into 13 x 9 cake pan

2nd layer:

1 white cake mix, crumble evenly over pumpkin mixture (dry mix).

3rd layer:

1 cup chopped pecans, sprinkle over 2nd layer

4th layer:

Melt 1 cup margarine and pour over third layer very carefully with a spoon.

Bake 55 min at 350 degrees. Cool and serve with ice cream or whipping cream.
